Mug Cakes

Here's a recipe for a "mug cake" that I got from my mother-in-law. It's kind of fun, and gives a nice little batch instead of making a huge cake, and is super fast. I like it with a scoop of ice cream on top. Here is our attempt at them. The right one is the regular cake, the left one is the lava cake.


Chocolate Mug Cake
4 tablespoons cake flour (I would just use regular flour)
4 tablespoons sugar
2 tablespoons cocoa powder
1 egg
3 tablespoons milk
3 tablespoons oil
drop of vanilla extract
3 tablespoons chocolate chips (opt)
1. In a microwavable mug, add dry ingredients, mix well with a fork.
2. Add egg, mix thoroughly.
3. Pour in milk, oil, and vanilla, mix well.
4 Add chips, if using.
5. Put mug in microwave, and cook for three minutes.
6. Cake will rise over top of mug -- do not be alarmed! ( that's what they wrote on the recipe)
Allow to cool a little and eat it warm. I'm sure you can also make a quick frosting, if you want.


Chocolate Lava Mug Cake

4 tablespoons flour
2 tablespoons brown sugar
1 tablespoon white sugar
2 heaping tablespoons cocoa powder
then add in:
1 egg
3 tablespoons oil
3 tablespoons milk
a splash of vanilla extract
a splash of orange extract (optional)
dash of salt

Whisk together thoroughly until well combined. Chop approximately 2 oz. chocolate and dump on top of the batter but do not stir. (I think you can use semi-sweet chocolate chips)

Microwave for one minute, then stir. Microwave another minute or minute and a half and viola! Chocolate cake in under 5 minutes. (although the melted chocolate won't be just in the middle)



Here's one that might make a cute birthday gift.
Lemon Glaze Mug Cake
You fill a microwavable, beautiful mug with the dry ingredients and the recipient adds the liquids and bakes it in the microwave. Makes 8 mugs.

Ingredients:
1 (18.5 oz.) pkg. yellow cake mix
1 (3.4 oz.) pkg. instant vanilla pudding mix
2 3/4 c. confectioner's sugar
1/4 c. powdered lemonade mix
Each mug should hold 1 1/2 cups water.

Place dry cake mix and dry pudding mix into a large bowl and blend well with a whisk. This will be about 4 to 4 1/2 cups of dry mix and will make 8 mugs of cake mix. Divide mix into 8 small plastic bags (about 1/2 c. each). Label the plastic bag, "dry cake mix". Place mix into a corner of each bag and tie it there with a twist tie.

Make glaze mix: in a medium bowl, combine confectioner's sugar with powdered flavoring mix. Divide into 8 small plastic bags and close bag with a twist tie. Label bags "glaze mix". Attatch each glaze mix bag to the cake mix bags with a twist tie and place one of each bag into each mug.

Attatch the following instructions to the mugs.

Generously spray inside of mug with cooking spray. Empty contents of cake mix packet inside of mug. Add 1 egg, 1 tablespoon of oil, and 1 tablespoon of water to dry mix. Mix 15 seconds, carefully mixing in all dry mix. Microwave on full power for 2 minutes. While cake is cooking, place ingredients from glaze mix into a very small container and add 1 1/2 teaspoons water. Mix well. When cake is done, pour glaze over cake in mug. Enjoy while warm.

Curb Appeal Galore

 This post is to document the journey our outside of our house has been on over the last few years. A lot of these projects I took on this summer, and a few I did earlier. Going Away Present

Tomorrow is going to be my last day of work at good old Independent Study. It's kind of sad, but also kind of exciting and scary all at the same time. It's sad because I've been here for so long. This is the longest I've ever had one job, and I have made a lot of really good friends here. It's exciting because I will get to have a lot of time off to do whatever I want during the day! And it's scary because I don't have another job lined up yet. After 6 months of applying and interviewing, I'm still none the better for it. A couple of days of randomness

I have a couple stories from the past couple days I thought would be fun to share. Yesterday I had a job interview!!! It is for my boss's job at Independent Study. She is having a baby, so I want her job. We shall see how that turns out. After the interview I was waiting in the parking lot for Jarom to come pick me up. While I was waiting there, a lost traveler asked me for directions to the Wilkenson parking lot. I told her to take a right out of the parking lot, then a right at the stop light, and blah blah blah. She thanked my and proceeded on her trek. I then became aware of why she was lost. She took a left out of the parking lot. Not a right, a left. I said right. One left does not equal two rights. It must be hard to get places if you get your lefts and rights mixed up. Poor lady. Yesterday we also decided to drive up to view an apartment that is for rent.
